At the Lello table

Gougères belong to the hour before dinner: a warm cheese puff, a cold glass, and no reason to hurry. Their appeal comes from the simplicity of the French choux pastry and the depth of good Comté. Here the black pepper stays quiet in the background; the lemon fleur de sel arrives at the very end, when its perfume can be noticed.

Method

  1. Bring the water, butter and fine sea salt to a rolling simmer in a heavy saucepan over medium heat, stirring until the butter has melted.
  2. Add all the flour at once. Stir vigorously with a wooden spoon for 1 to 2 minutes, until the dough forms a smooth ball, pulls away from the sides, and leaves a thin film on the pan's base.
  3. Transfer the dough to a mixing bowl and let cool for 3 to 4 minutes, stirring occasionally so steam escapes. Beat in the eggs one at a time, mixing thoroughly after each. The dough should be glossy and fall from a spatula in a thick V-shaped ribbon.
  4. Fold in the finely grated Comté, black pepper and, if using, the fresh lemon zest. Mix just until evenly distributed.
  5. Pipe or spoon approximately 24 rounded mounds, each about 1 1/2 inches / 4 cm across, onto the prepared sheets, leaving about 2 inches / 5 cm between them.
  6. Bake for 12 minutes at 425°F / 220°C without opening the oven. Reduce the temperature to 375°F / 190°C and bake a further 15 to 18 minutes, until the puffs are deeply golden, firm and dry-looking. Rotate the trays only once they have set if your oven heats unevenly.
  7. Transfer to a rack. For extra-crisp gougères, prick each gently near the base to release steam and return to the switched-off oven for 2 minutes with the door slightly ajar.
  8. While still warm, scatter the measured Sicilian Lemon Fior di Sale sparingly across the pastries. Serve immediately.

Lello Note

  • The pastry should dry briefly in the saucepan before the eggs are added; that small step gives the gougères their characteristic hollow interiors.
  • A deeper golden crust matters more than a perfect shape. Underbaked gougères can collapse as they cool.
  • Fior di Sale belongs on the warm finished pastry, not mixed into the dough, so its delicate lemon fragrance and flakes remain distinct.

Substitutions

  • Gruyère may replace Comté; choose a good melting cheese and grate it finely.
  • Plain fleur de sel with the smallest touch of fresh lemon zest can stand in for Sicilian Lemon Fior di Sale.
  • For a milder version, reduce the pepper by half. Avoid soft, wet cheeses in the choux dough; they change its moisture balance.

To serve

Pile the gougères on a warmed ivory platter and carry them to the table as guests arrive. Pair with sparkling water or dry sparkling wine, and leave space for dinner.

Storage & make-ahead

Best on the day they are baked. Freeze baked, fully cooled gougères in an airtight container for up to one month; reheat from frozen at 350°F / 175°C until crisp and hot, about 8 to 10 minutes. Add the finishing salt after reheating.
