Dark Chocolate Chestnut Tart with Fleur de Sel

Chestnut and dark chocolate belong together because neither needs to impersonate the other. The chestnut brings earthiness, sweetness and vanilla; the chocolate supplies bitterness and structure. A thin chestnut layer beneath restrained dark-chocolate ganache keeps those roles distinct.
Method
- Heat the oven to 350°F / 175°C. Have ready a 9-inch / 23-cm tart pan with removable base.
- Whisk the flour, cocoa, confectioners’ sugar and fine sea salt together. Add the cold butter and work it into the dry ingredients with your fingertips or a pastry blender until the mixture resembles coarse crumbs.
- Add the egg yolk and 1 tablespoon / 15 mL ice water. Mix only until the dough begins to hold together when pressed. Add the remaining water only if necessary.
- Press the dough evenly across the base and sides of the tart pan. Refrigerate for 20 minutes. Prick the base lightly with a fork, line with parchment and pie weights, and bake for 15 minutes. Remove the weights and parchment and bake for another 5 to 7 minutes, until the shell appears dry and set. Cool completely.
- Stir the chestnut paste until smooth, then spread it over the cooled tart base in a thin, even layer. Do not build a thick mound; the chestnut should remain a distinct accent beneath the chocolate.
- Place the chopped chocolate in a heatproof bowl. Heat the cream until steaming and just beginning to simmer around the edge. Pour it over the chocolate and leave undisturbed for 2 minutes.
- Stir slowly from the center outward until the ganache becomes smooth and glossy. Add the butter and stir until fully incorporated.
- Pour the ganache over the chestnut layer and gently level the surface. Refrigerate for approximately 90 minutes, or until the ganache is set enough to slice cleanly but remains supple.
- Remove the tart from the refrigerator 15 to 20 minutes before serving. Scatter only a few crystals of Sal de Ibiza Fleur de Sel over the surface. Cut with a warm, dry knife and serve with unsweetened crème fraîche if desired.
Cook’s notes
- There is no additional sugar in the chocolate filling intentionally. The chestnut paste already brings sweetness and vanilla, while dark chocolate supplies the bitterness the tart needs.
- Keep the chestnut layer thin enough to read as a distinct flavor rather than a second filling. The cross-section should show cocoa pastry, chestnut and chocolate in disciplined proportions.
- Fleur de sel is the final punctuation, not decoration. A few crystals are enough to sharpen the chocolate and make the chestnut taste more dimensional.
Substitutions
- Unsweetened chestnut purée is not a direct one-for-one substitute for prepared chestnut paste. It lacks the sugar, vanilla and finished texture, so it must first be sweetened and loosened to taste.
- A 55–60% chocolate will work but will produce a sweeter, softer dessert. Chocolate above about 72% creates a more austere tart and may benefit from slightly more cream.
- Unsweetened softly whipped heavy cream is the closest serving substitute for crème fraîche. Mascarpone is considerably richer and should be loosened with cream first.
- A plain pâte sucrée can replace the cocoa crust if you prefer a less intensely chocolate dessert.
- A shallow 9-inch pie plate can replace the tart pan, although the slices will not have the same clean vertical profile.
To serve
Serve in narrow wedges, slightly cool rather than refrigerator-cold, with a small spoonful of unsweetened crème fraîche. Coffee, black tea or a small espresso is enough alongside; the tart does not need fruit or additional sauce.
Storage & make-ahead
Keep the finished tart covered and refrigerated for up to 3 days. For the cleanest texture, remove it from the refrigerator 15 to 20 minutes before serving. The baked cocoa shell can be made 1 day ahead and kept airtight at room temperature; assemble the tart after the shell is completely cool.
