At the Lello table
The best hot chocolate is closer to a small dessert than a drink to carry. Dark chocolate gives structure; chestnut cream softens its edges; espresso deepens the roast without turning the cup into coffee. Fleur de sel comes last, adding a quiet contrast that makes each flavor more distinct.
Method
- Warm the whole milk and cream together in a heavy saucepan over medium-low heat, stirring occasionally, until steaming and just below a simmer. Do not boil.
- Lower the heat. Add the finely chopped dark chocolate and whisk gently until melted and completely smooth.
- Whisk the sweet chestnut cream in a small bowl with 2 to 3 tablespoons / 30 to 45 mL of the warm chocolate mixture to loosen it. Return this to the saucepan and whisk until incorporated.
- Add the hot espresso and vanilla, if using. Continue warming over low heat for 1 to 2 minutes, whisking slowly, until silky. Do not allow the chocolate to scorch.
- Taste. The chestnut cream should provide sufficient sweetness, especially if the chocolate is not unusually bitter. If the mixture seems too thick, loosen it with a little more warm milk.
- Pour into four small warm cups. Add a modest spoon of unsweetened whipped cream if desired and finish each cup with only a few crystals of fleur de sel. Serve immediately.
Lello Note
- The chestnut is meant to give velvet texture and a toasted sweetness, not overwhelm the chocolate. Begin with the measured quantity and taste before increasing.
- Add espresso last to preserve its aromatic lift. A decaffeinated shot works beautifully in the evening.
- Use fleur de sel sparingly; you should encounter an occasional delicate crystal, never a salty drink.
Substitutions
- Strong moka-pot coffee may replace espresso, but use the same small quantity to avoid thinning the chocolate.
- For a lighter cup, omit the heavy cream and use the equivalent volume of whole milk; the finish will be less rich.
- If using sweeter chocolate, reduce the chestnut cream slightly rather than adding more bitterness with extra espresso.
- Use finely chopped plain dark chocolate; cocoa powder alone will not give the same silky body.
To serve
Present in small porcelain or stoneware cups with demitasse spoons. A modest butter cookie is enough alongside. This is designed to be sipped slowly, not topped extravagantly.
Storage & make-ahead
Best freshly made. Cool promptly, refrigerate in a covered container for up to 2 days, and reheat gently while whisking. Do not boil or repeatedly reheat the same batch.
