At the Lello table
Lavender honey is most elegant when it is not buried under too many competing flavors. Thick yogurt gives enough acidity to keep the honey from reading as simply sweet.
Method
- Divide the yogurt among shallow bowls and create a small well in the center of each.
- Drizzle with lavender honey, then add fruit and nuts.
- Finish with citrus zest. Serve immediately.
Cook’s notes
- If the honey is firm, warm the closed jar gently in barely warm water rather than microwaving it.
- Use unsweetened yogurt; the honey should control the sweetness.
Substitutions
- Labneh makes the bowl tangier and richer; loosen with a spoonful of milk if needed.
- Maple syrup changes the entire aromatic profile and is not a like-for-like substitute.
To serve
Serve with tea, toasted brioche, or as part of a quiet brunch table.

Assemble at the last moment. Yogurt, fruit and nuts can be prepared separately the night before.
