At the Lello table

Madeleines are at their best when they remain small cakes rather than muffins in disguise. Here they are perfumed with Marie Antoinette tea, then brushed lightly with acacia honey while still warm so the surface glows without turning sticky or heavy.

Method

  1. Melt the butter over low heat. Add the tea, remove from the heat and let steep for 10 minutes. Strain and cool to lukewarm.
  2. Whisk the eggs and sugar vigorously for 2 to 3 minutes until paler and slightly thickened. Whisk in the lemon zest and milk.
  3. Whisk together the flour, baking powder and salt. Fold into the egg mixture just until no dry streaks remain. Fold in the tea-infused butter.
  4. Cover and refrigerate the batter for 1 hour. Meanwhile, butter a 12-mold madeleine pan and chill it.
  5. Heat the oven to 400°F / 205°C. Divide the batter among the molds, filling each about three-quarters full.
  6. Bake for 10 to 12 minutes, until the edges are golden and the centers spring back lightly.
  7. Warm the honey briefly if needed, then brush it lightly over the hot madeleines. Finish with a little fresh lemon zest and serve warm or the same day.

Cook’s notes

  • Madeleines stale quickly. That is not a flaw but part of their nature, which is why they are worth baking in small quantities.
  • A very thin honey glaze is enough; the cakes should glisten, not feel lacquered.
  • Do not overmix once the flour goes in. Their texture should remain delicate and fine-crumbed.

Substitutions

  • Orange zest may replace lemon for a slightly rounder citrus note.
  • A neutral floral honey can replace the acacia honey, though it may taste more assertive.
  • If a madeleine pan is unavailable, the batter can be baked in mini muffin tins, though the shape and texture will be less classical.

To serve

Serve slightly warm with black tea, champagne tea cocktails or after lunch with coffee.

Storage & make-ahead

Keep in an airtight tin for up to 1 day. Refresh briefly in a low oven if desired.
