Crème brûlée asks for restraint. The custard should be unmistakably vanilla, the caramelized lid properly thin and brittle, and the violet flower confit just enough to read as a luxury rather than a perfume counter.

Method

  1. Heat the oven to 325°F / 165°C. Arrange 6 ramekins in a baking dish.
  2. Combine the cream, vanilla pod and seeds in a saucepan and heat until steaming and just beginning to simmer. Remove from the heat and let stand for 10 minutes.
  3. Whisk the yolks, sugar and salt until combined but not foamy. Gradually whisk in the warm cream. Strain the custard.
  4. Place 1 teaspoon / 5 g violet flower confit in the bottom of each ramekin. Pour the custard over it.
  5. Pour hot water into the baking dish to come halfway up the sides of the ramekins. Bake for 30 to 35 minutes, until the custards are just set at the edges but still tremble at the center.
  6. Cool, then refrigerate for at least 4 hours. Before serving, sprinkle a thin even layer of sugar on top and brûlée with a torch or under a hot broiler until amber and glassy.

Cook’s notes

  • The confit should sit as a quiet layer, not a full fruit compote. Its purpose is to surprise, not overwhelm.
  • A properly brûléed sugar lid should crack cleanly under the spoon without being thick enough to taste burnt.
  • Chilling thoroughly before torching helps preserve the contrast between cold custard and warm caramel.

Substitutions

  • Vanilla paste can replace the vanilla bean, though the final look will be less classical.
  • Rose petal confit can replace violet for a more familiar floral note.
  • If a torch is unavailable, broil the sugared tops very briefly and watch closely.

To serve

Serve exactly as it is, without whipped cream or sauce.

Storage & make-ahead

The baked custards keep refrigerated for up to 2 days before brûléeing. Caramelize the sugar only immediately before serving.
