At the Lello table
French riz au lait has an old-fashioned ease when it is made patiently. Milk and cream become velvety around each grain of rice; real vanilla gives warmth rather than sweetness alone. Rose petal confit is added only at the table, a delicate floral note against the richness of the pudding and the crunch of pistachios.
Method
- Combine the rice, milk, cream, sugar, sea salt and the seeds and pod of the vanilla bean in a heavy saucepan. If using vanilla extract instead, keep it for the end.
- Bring to a gentle simmer over medium-low heat, stirring often, then lower the heat so only an occasional bubble breaks the surface.
- Cook uncovered for 35 to 40 minutes, stirring and scraping the bottom every few minutes, until the grains are soft and the mixture is creamy but still loose enough to fall slowly from a spoon. Add a little extra milk if it thickens before the rice is tender.
- Remove from the heat and discard the vanilla pod. If using vanilla extract, stir it in now. Let the pudding rest for 5 minutes; it will continue to thicken.
- Divide between six small bowls. To serve warm, finish now. For a chilled dessert, cover and refrigerate until cool, then loosen each portion with a little milk if desired.
- Spoon approximately 1/2 tablespoon / 9 g of rose petal confit over each bowl and scatter with chopped pistachios. Serve without stirring the confit completely into the pudding, so its color and fragrance remain distinct.
Lello Note
- Stop cooking while the pudding looks slightly looser than you want; cooling will firm it.
- L’Épicurien Rose Petal Confit is a finished preserve. Add it just before serving rather than simmering it into the milk.
- For a beautiful contrast, place the confit in a small glossy pool at the center and keep the pistachios unevenly scattered. The garnish should be restrained.
Substitutions
- Use another short-grain white rice if Arborio is unavailable; long-grain rice gives a less creamy result.
- For a lighter version, replace the cream with an equal volume of whole milk; the pudding will be less lush.
- Finely chopped toasted almonds can replace pistachios. Omit nuts entirely for guests with nut allergies, and check product labels for cross-contact.
- If you prefer a simpler floral finish, use less rose confit rather than adding extra sugar.
To serve
For a dinner party, serve cold in low stoneware bowls with a small silver spoon. For an afternoon treat, serve slightly warm so the vanilla perfumes the room.
Storage & make-ahead
Refrigerate in an airtight container within 2 hours of cooking and use within 2 days. Keep rose confit and pistachios separate until serving. Rice pudding should not be left out for extended periods.
