Ventresca is the cut the Spanish and Portuguese prize above all others: the belly of the tuna, marbled, silky, and impossibly tender. José Gourmet's ventresca is 70% albacore tuna (Thunnus albacares), preserved in olive oil with a pinch of salt — and nothing else.


This is tinned fish at its most luxurious. Serve it simply, at room temperature, with good bread and a glass of Albariño — or lay it over a salad and let it do all the talking.
