The Flour + Water Pasta Trio — Spaghetti, Penne & Elbow

Born from Flour + Water, the San Francisco restaurant that opened in the Mission District in 2009, this trio brings a chef’s obsession with pasta texture, sauce adhesion and proper bite into the pantry. Flour + Water Foods was created by co-chefs Thomas McNaughton and Ryan Pollnow to translate that restaurant discipline into dried pasta made for home.

Each pasta is made with certified organic North American semolina and extruded through artisanal bronze dies. That traditional process leaves the surface deliberately rough and porous — exactly what you want when the sauce is meant to cling rather than slide away.

The trio includes:

• Organic Spaghetti — 1 lb
  A clean, golden strand with enough texture to hold glossy tomato sauces, cacio e pepe, seafood sauces and simple olive oil emulsions.
• Organic Penne Rigate — 1 lb
  Ridged tubes built for ragù, baked pasta, vodka sauce and anything that deserves to collect in the grooves.
• Organic Elbow Macaroni — 1 lb
  A classic shape treated with uncommon seriousness — ideal for cheese sauces, gratins, brothy beans and composed pasta salads.

The difference is in the surface. Bronze-die extrusion gives the pasta a faintly matte, almost flour-dusted exterior. In the pot it keeps a satisfying structure; in the pan it behaves like restaurant pasta should, absorbing sauce while preserving its own character.
