Why We Chose It: THETA Rare Rose Honey

Discover why THETA Rare Rose Honey from Lesvos, Greece earned a place in the Lello collection—from its remarkable provenance to its award-winning taste.

Why We Chose It: THETA Rare Rose Honey

From the island of Lesvos, a honey that made us reconsider what honey could be.

There are products we choose because they are useful.

There are products we choose because they are beautifully made.

And then, occasionally, we encounter something so unusual that it makes us stop.

THETA Rare Rose Honey was one of those products.

At Lello, our shelves were never intended to contain everything. Quite the opposite.

We believe the most interesting pantry is a highly edited one—a collection of things discovered slowly, chosen deliberately, and kept because they offer something that ordinary versions simply do not.

That philosophy is the reason THETA Rare Rose Honey is here.

It Begins on a Greek Island

THETA comes from Eresos on the Greek island of Lesvos, a landscape with an agricultural history stretching back centuries.

The family behind THETA traces its own relationship with the land through three generations.

Their ancestors produced olive oil. Later came figs and fig syrup. By the late 1960s, beehives had joined the family’s agricultural life.

That lineage matters to us.

Not because age alone makes something exceptional, but because knowledge accumulated over generations is increasingly difficult to reproduce.

THETA was formally established decades later, carrying that agricultural experience into a decidedly modern pursuit: creating extraordinarily refined expressions of the ingredients surrounding them.

And then came the roses.

Honey, But Not As We Knew It

THETA introduced its Rose Honey in 2016.

This isn’t simply conventional honey dressed in beautiful packaging.

Greek wildflower honey meets a rare variety of red rose through a specialized production process designed to retain the delicate aroma of the fresh flowers.

The result is remarkable.

The color tends toward rose amber.

The sweetness is smooth.

And then comes the unmistakable presence of rose—not the artificial perfume one might expect from something rose-flavored, but something floral, elegant and strangely transporting.

It occupies that fascinating territory between food and fragrance.

That alone would have caught our attention.

But it wasn’t enough to earn a place at Lello.

Then we discovered what happened after THETA released it.

Three Stars. And One of the World’s Top 50.

In 2017, THETA’s Rose Honey entered the Great Taste Awards.

It received three stars.

More significantly, it was selected among the competition’s Top 50 foods that year.

For us, that distinction confirmed something important.

This wasn’t novelty masquerading as luxury.

Behind the extraordinary presentation was a product capable of being judged on taste alone.

And winning.

Why Lello Chose It

Luxury food has become a surprisingly complicated category.

Beautiful jars are everywhere.

Gold labels are everywhere.

Words such as artisan, premium and exclusive appear on products so frequently that they have nearly lost their meaning.

We look for something else.

We ask a simpler question:

Would we remember this after tasting it?

With THETA Rare Rose Honey, the answer was immediate.

Yes.

It possesses several qualities we continually search for at Lello: provenance, craftsmanship, scarcity, beauty and—most importantly—an extraordinary sensory experience.

Remove the box.

Remove the label.

Remove the story.

The honey is still special.

That is our test.

The Beauty Matters, Too

We would be pretending if we said presentation doesn’t matter to us.

It does.

A beautiful pantry is one of life’s small pleasures.

THETA understands this unusually well. Its honey is presented more like an object collected during one’s travels than something pulled from an ordinary grocery shelf.

And perhaps that is exactly how it should be regarded.

A jar can sit beautifully beside good silver, old linen, porcelain and flowers on a breakfast table without looking remotely out of place.

That intersection—exceptional food and beautiful living—is precisely where Lello exists.

How We Would Serve It

Our first recommendation is almost embarrassingly simple.

Taste it alone.

A small spoonful is enough.

Let the honey warm slightly on the palate and allow the rose to emerge.

Only after understanding it by itself would we begin putting it on other things.

Spoon a little over warm brioche.

Serve it beside a beautifully aged cheese.

Let it fall over thick Greek yogurt at breakfast.

Add a restrained amount to a cheese board with fresh figs and toasted nuts.

Or bring out the jar after dinner with tea and good conversation.

This is not honey we would disappear into a complicated recipe.

It deserves to remain recognizable.

The Kind of Luxury We Believe In

Perhaps the greatest misconception about luxury is that it must announce itself.

We think the opposite.

The most memorable luxuries are often tiny things:

Excellent butter.

Heavy linen.

A perfectly sharpened knife.

Flowers cut from the garden.

Olive oil you can smell before you taste.

Honey infused with roses on a Greek island.

Things that make an ordinary Tuesday morning feel slightly less ordinary.

That is why we chose THETA Rare Rose Honey.

Not because everyone needs rose honey.

They don’t.

But because somewhere in the world, someone cared enough to make an extraordinary version of something most of us stopped thinking about long ago.

And we believe those things are worth finding.

That is what Lello is here to do.
