At the Lello table
The pleasure of potato soup lies in its simplicity. Tender potatoes create the body, a little smoked Gouda brings gentle depth, and the final scatter of chives and crisp croutons keeps each spoonful interesting. The finishing olive oil is not decoration; it gives the bowl fragrance and a beautiful, glossy surface.
Method
- Melt the butter in a heavy Dutch oven over medium heat. Add onion and celery and cook gently until soft and translucent, about 8–10 minutes. Add the garlic and thyme and cook until fragrant, about 30 seconds.
- Add potatoes and stock. Bring briefly to a boil, then reduce to a steady simmer. Cook for 15–20 minutes, or until the potatoes are completely tender.
- Blend roughly two-thirds of the soup until silky, leaving enough potato intact for body and texture. Return the blended soup to the pot.
- Stir in the half-and-half and warm gently; do not allow it to boil.
- Reduce the heat to low. Add smoked Gouda gradually, stirring until melted and smooth. Season with kosher salt and plenty of freshly ground black pepper.
- Ladle into warm white bowls. Finish with fresh chives, golden croutons, cracked black pepper and a restrained drizzle of extra virgin olive oil. Serve at once.
Cook’s notes
- The secret to a silky finish is adding cheese slowly off a hard simmer; too much heat can split the dairy.
- Blending only part of the potatoes gives the soup body without adding flour.
- For crisp croutons, toss cubes of day-old bread with olive oil and bake at 375°F / 190°C for 10–12 minutes until golden; add them just before serving.
Substitutions
- Vegetable stock makes this vegetarian when paired with a suitable vegetarian cheese; chicken stock produces a fuller savory flavor.
- For less smoke, use half regular Gouda and half smoked Gouda.
- A spoonful of crème fraîche can replace part of the half-and-half, but add it gently over low heat.
To serve
Serve as a generous first course or an easy supper with toasted country bread and a simple green salad. Use a shallow white bowl, scatter the croutons at the last possible moment, and finish with the best olive oil in the pantry.
Storage & make-ahead
Cool promptly and refrigerate in a covered container for up to 3 days. Reheat gently over low heat, stirring and adding a little stock if needed. Do not boil after reheating, and store croutons separately.
