At the Lello table

Warm the cheese just enough to soften it. The fig jam belongs on top after the toast leaves the oven.

Method

  1. Brush baguette lightly with olive oil and toast until golden.
  2. Spread with goat cheese and return to the heat just until the cheese is warm and softened.
  3. Top each toast with fig jam and black pepper. Serve at once.

Cook’s notes

  • Do not broil after adding jam; concentrated sugar can scorch quickly.

Substitutions

  • Camembert gives a richer, less tangy version.

To serve

Serve with olives and a dry aperitif.
