Lemon-Thyme Roast Chicken with Dijon Pan Juices

Mustard is most useful here as structure: it seasons the chicken, helps the skin brown, and gives the pan juices enough acidity to stay lively.
Method
- Pat the chicken dry. Mix mustard, olive oil, salt and pepper; rub over the skin and lightly under the breast skin.
- Place lemon halves and thyme in the cavity. Roast breast-side up until deeply browned and the thickest part of the thigh reaches 165°F / 74°C, about 50 to 60 minutes depending on size.
- Transfer the chicken to a board and rest 15 minutes.
- Set the roasting pan over medium heat, add wine or stock and scrape up the browned bits. Simmer until lightly reduced; taste and correct seasoning.
- Carve and spoon the pan juices around, not over, the crispest skin.
Cook’s notes
- A thermometer is more reliable than cooking by time alone.
- Resting keeps the juices in the meat and gives you time to finish the sauce.
Substitutions
- Bone-in chicken thighs work, but reduce roasting time and begin checking around 35 minutes.
- Plain Dijon works, but add fresh lemon zest and thyme to restore the aromatic profile.
To serve
Serve with crushed potatoes, green beans or a bitter-leaf salad.
