Tasting notes
The scent of jasmine on a warm evening, caught in a clear, lightly set preserve. Sweet but not heavy. A small spoonful on fresh ricotta, vanilla panna cotta or Greek yogurt, or beside a mild goat cheese.
About L’Épicurien
L’Épicurien has cooked preserves in open cauldrons in Le Bosc, near Montpellier, since the late 1980s, a family house run by the founder’s nephews. The flower confits are its signature: clear, lightly set jellies of cane sugar and lemon carrying the scent of a single flower, here jasmine, with the petals suspended in the jar. They are made to be used by the teaspoon, as an accent rather than a spread.
How to enjoy
- Spoon over yogurt, panna cotta, vanilla ice cream or crème brûlée
- Use in macarons, cakes or white-chocolate desserts

Questions
Is it a jam? No; there is no fruit. It is a flower jelly, translucent and lightly set, sweeter and softer than a jam.
How much to use? A teaspoon on a serving. The perfume is the point and it fades if buried.
Savory uses? A little over fresh goat cheese, or whisked into a dressing for a fruit salad.
