About Il Boschetto
Il Boschetto works out of Castiglione della Pescaia, on the Maremma coast of Tuscany, making infused oils, vinegars and spice blends the traditional way. This one is 97% extra virgin olive oil with 2% summer truffle — Tuber aestivum, the black summer truffle of central Italy — and 1% flavoring to carry the aroma. A little does a great deal.
How to enjoy
- Drizzle over risotto, pasta and mashed potatoes just before serving
- Finish eggs, mushrooms, pizza or polenta
- Use sparingly with soft cheese or simple soups

Questions
Is there real truffle in it? Yes, 2% summer truffle, plus a flavoring to hold the aroma, which is how nearly all truffle oils are made.
How much? Drops, not spoonfuls: a few over the plate at the table. Never heat it.
Best use? Scrambled eggs, a plain risotto, or pappardelle with mushrooms and Parmesan.
