At the Lello table
A beautiful breakfast does not require many ingredients. It requires the right ingredients arriving in the right order. Whole-milk ricotta is whipped until light and spread over warm country bread; Heritage olive oil settles into the shallow grooves, jasmine confit follows in small fragrant ribbons, and Sicilian lemon sea salt supplies brightness and a final crystalline texture.
Method
- Toast the sourdough or country bread until deeply golden at the edges while retaining a slightly tender center. Transfer immediately to two plates or a small serving platter.
- Place the ricotta in a medium bowl and whisk vigorously for 1 to 2 minutes, until smooth, glossy and noticeably lighter. A hand mixer may be used for an especially airy texture.
- Divide the whipped ricotta between the warm slices of toast. Use the back of a spoon to spread it generously, creating shallow wells and soft ridges across the surface.
- Drizzle the Heritage Extra Virgin Olive Oil over the ricotta, allowing it to settle naturally into the grooves rather than covering every inch.
- Spoon the jasmine flower confit in small, irregular ribbons over the center of each toast. Crush the Sicilian lemon sea salt lightly between your fingertips and scatter it over the top. Serve immediately.
Cook’s notes
- Jasmine confit is not ordinary breakfast jam. Its perfume is more concentrated than that of most fruit preserves, so it should appear in small ribbons rather than as a complete layer.
- Add the olive oil before the confit. The oil settles into the ricotta and gives the toast its savory structure, while the confit remains visible and concentrated.
- The lemon sea salt belongs at the very end. Its delicate crystals and citrus perfume are diminished when mixed in or exposed to heat.
Substitutions
- Sheep’s-milk ricotta creates a more pronounced dairy flavor. For a tangier version, blend three parts ricotta with one part fresh goat cheese.
- Labneh may replace the ricotta, but the toast will be tangier, saltier and denser. Use the lemon sea salt with additional restraint.
- Rose or violet flower confit can replace jasmine, although each creates a distinct recipe. Begin with slightly less because floral intensity varies.
- Plain fleur de sel with the smallest amount of finely grated fresh lemon zest can approximate the finish, but it will not reproduce the integrated citrus character of the Sicilian lemon salt.
- A country boule, pane pugliese or restrained seeded loaf will work. Avoid highly sweetened bread, which competes with the jasmine.
To serve
Serve with espresso, café au lait, black tea or a small bowl of barely sweetened berries. For an aperitivo version, use smaller pieces of grilled country bread and arrange them on a shared platter, applying the jasmine confit especially sparingly.
Storage & make-ahead
The ricotta may be whipped up to one day in advance and refrigerated in an airtight container; stir it briefly before using. Keep the confit, olive oil and salt separate, and toast the bread only immediately before assembly. Finished toast should be served at once.
