At the Lello table

A bowl of autumn warmth, served by candlelight. Butternut squash gives this soup its golden color and velvety body, while fresh apples bring gentle fruitiness. Nutmeg adds warmth without overwhelming the squash. The final touch belongs to Gary: his crisp, beautifully seasoned croutons. What goes into them remains a house secret—and that is part of their charm.

Method

  1. In a heavy-bottomed pot, warm the olive oil over medium heat. Add the butternut squash and diced apples. Stir gently for about 5 minutes, allowing them to soften without browning.
  2. Pour in the vegetable stock, season lightly with sea salt and pepper, and bring to a simmer. Cover partially, reduce the heat and cook for 30–35 minutes, stirring occasionally, until the squash is completely tender. Add a little extra stock or water if the pot looks dry.
  3. Add the fresh apple cider and nutmeg. Simmer uncovered for 5 more minutes to marry the flavors.
  4. Blend with an immersion blender until silky smooth, or carefully blend in batches. If the soup is too thick, add more stock a little at a time. Taste and adjust the seasoning; the flavor should be gently sweet, not sugary.
  5. Ladle into warm white bowls. Finish with a restrained thread of extra virgin olive oil and a generous scattering of Gary’s secret golden croutons. Serve immediately.

Cook’s notes

  • The natural sweetness of apples varies. Choose crisp, sweet-tart fruit and unsweetened cider; add stock if the soup tastes too sweet.
  • Blend thoroughly for a refined, velvety finish. Add the cider near the end to keep the apple flavor fresh.
  • Do not add croutons until serving; their contrast with the silky soup is the pleasure of the dish.
  • Gary’s croutons are his personal secret recipe and intentionally are not reproduced here.

Substitutions

  • Vegetable stock gives a clean flavor; chicken stock may be used for a richer, nonvegetarian version.
  • If fresh apple cider is unavailable, use an equal quantity of unsweetened cloudy apple juice.
  • A spoonful of crème fraîche can be swirled through the finished soup for a richer texture, though it is not necessary.

To serve

Serve as an elegant autumn starter or a cozy light supper, in warm white bowls with the croutons added at the very last moment. Candlelight and simple ivory flowers are more than enough decoration.

Storage & make-ahead

The soup can be made up to 3 days ahead and refrigerated promptly in a covered container. Reheat gently over low heat, loosening with stock if needed. Freeze the soup without garnish for up to 2 months. Store Gary’s croutons separately and add only when serving.
