At the Lello table

The French 75 is already celebratory. Rose confit makes it more distinctive without making it sweet or perfumed. Lemon keeps the floral note precise, while brut sparkling wine gives the drink its dry, clean finish.

Method

  1. Chill two flutes or small coupes. Measure the sparkling wine and return it to the refrigerator while the base is mixed.
  2. In a cocktail shaker, whisk the lemon juice and rose confit together until the jelly loosens and the petals are evenly suspended.
  3. Add the gin and a generous handful of ice. Shake firmly for 10–12 seconds, until the shaker is very cold.
  4. Fine-strain equally into the chilled glasses.
  5. Top each glass slowly with 3 oz / 90 mL brut Champagne. Give each cocktail one gentle lift with a bar spoon—enough to combine, not enough to flatten the bubbles.
  6. Finish each glass with one dehydrated lemon slice and serve immediately.

The Lello Note

Rose confit works here as both sweetener and perfume. Lemon keeps the flower from becoming cosmetic; dry sparkling wine keeps the finish clean. Use the confit as a measured accent—the same way Lello uses flower preserves at the table.

Substitutions

  • Vodka may replace gin for a quieter botanical profile.
  • A dry crémant or cava may replace Champagne; avoid sweet sparkling wine.
  • For a nonalcoholic version, use a dry zero-proof gin and alcohol-free brut sparkling wine in the same measures.
  • If a dried lemon slice is unavailable, use one wide fresh lemon twist per glass.
  • Do not substitute rose water directly for the confit; it lacks the sugar and body needed to balance the lemon.

To serve

Serve immediately in chilled coupes or flutes while the bubbles are lively. It is especially good before dinner with salty almonds, olives or a simple cheese board.

Make ahead

Whisk the lemon juice and rose confit together up to 2 hours ahead and refrigerate. Add gin, ice and sparkling wine only when ready to serve.
