At the Lello table

A beautifully made cake sometimes needs only a thoughtful way to serve it. This Provençal gâteau offers almonds, figs and raisins in a tender crumb. Golden pears echo the fruit, while lavender honey perfumes the warm glaze and the cool crème fraîche without stealing the show.

Method

  1. Heat the oven to 300°F / 150°C. Remove the gâteau completely from its packaging and cut into 6 neat wedges. Arrange on a parchment-lined tray and warm for 5–6 minutes—just enough to release the almond aroma, not enough to dry the crumb.
  2. While the cake warms, melt the butter in a wide skillet over medium-high heat. Add the pear wedges in one layer and cook without moving for 3 minutes. Turn and cook 2 minutes more, until golden at the edges but still holding their shape.
  3. Lower the heat. Add 2 tbsp / 42 g lavender honey, the water and a pinch of salt. Toss for 2–3 minutes, until the liquid becomes a light glaze and the pears are just tender. Remove from the heat.
  4. Stir the crème fraîche with the remaining 1 tbsp / 21 g lavender honey and the lemon juice. Keep the mixture softly marbled rather than perfectly uniform.
  5. Place one warm cake wedge on each pure-white dessert plate. Add three glazed pear wedges and a spoonful of lavender-honey crème fraîche. Spoon over the pan glaze and finish with toasted almonds. Serve while the cake and pears are warm and the cream is cool.

The Lello Note

The gâteau already carries almonds, figs, raisins, honey and vanilla; this is service, not reinvention. The pears bring warmth and freshness, while the lavender honey should read as a floral lift—not a second dessert layered on top.

Substitutions

  • Use firm Anjou pears or crisp Honeycrisp apples instead of Bosc pears; allow apples 1–2 extra minutes.
  • Use equal parts mascarpone and plain whole-milk yogurt instead of crème fraîche.
  • For a softer, less floral finish, use Famille Perronneau Acacia Honey in place of lavender honey. The acacia jar is 8.8 oz / 250 g.
  • Use toasted hazelnuts in place of sliced almonds to echo the hazelnuts already present in the cake.

To serve

Choose small, pure-white dessert plates and position the cake and pear wedges with a little space between them. Add the cool cream at the last minute so it keeps its shape; finish with the honey pan glaze and a few toasted almonds.

Make ahead & storage

Warm only what you intend to serve. Store any unused gâteau according to its package instructions. Refrigerate leftover cooked pears and crème fraîche separately and use within 2 days.
